Mengolah Jamur

Jamur adalah bahan makanan yang paling mudah beradaptasi dengan aneka bumbu. Makanya, banyak orang mengolahnya menjadi aneka hidangan istimewa nan lezat. Agar cita rasanya makin mantap, perhatikan cara mengolah dan menyimpan jamur.

Mengolah jamur segar. Jamur segar tak perlu dikupas dan dicuci, karena akan cepat rusak dan aromanya berkurang. Campur sedikit air jeruk nipis dalam air bersih. Rendam lap atau kertas tisu, peras, gunakan untuk melap jamur perlahan hingga kotorannya hilang. Agar jamur tetap putih bersih, caranya: didihkan air, tambahkan sedikit air jeruk nipis, masukkan jamur, masak 5 menit. Angkat, langsung rendam di air es. Setelah dingin, simpan jamur di kulkas sebelum diolah.

Mengolah jamur kering. Hati-hati, seringkali jamur kering berbau apek akibat lamanya penyimpanan atau proses pengeringan yang kurang baik. Cara mengolahnya: rendam jamur kering di air hangat 15-30 menit, untuk membuang kotoran yang menempel dan mengembalikan kesegarannya. Buang bagian kerasnya (jika air rendaman berwarna coklat, langsung bilas dengan air bersih), rendam lagi di air hangat bersih, diamkan 10 menit sebelum diolah.

Menyimpan jamur. Jika ada sisa jamur usai digunakan, simpan hati-hati. Caranya, bungkus jamur dalam kertas koran lalu masukkan ke kantong plastik, simpan di lemari es. Jamur akan mampu bertahan sampai 1 minggu.
